Don't mind the empty SPEED value in the 3rd type. There will be a value in it. Once I figure out what it is.

I like #1 but I recommend only using ATK, DEF, SPD and KI.. REG is not really required to show..

Btw does the ki usage also means their ki also regenerates slower.

No, everyone's ki regenerates at same speed.
